Kulfi (Indian Ice Cream)
4 cups milk
3/4 cup sugar
1 tablespoon cornstarch
2 tablespoons sweetened condensed milk, if desired
water or milk
2 tablespoons chopped pistachios
2 tablespoons chopped almonds
2 teaspoons rose water or 1 to 2 green cardamom pods, cracked
fresh fruit, if desired
TO GARNISH:
chopped nut, if desired
In a small saucepan, reduce milk to 1/2 of original quantity. Add sugar;
stir until dissolved. (If using cardamom pods add to milk before reducing.
Remove before mixing in cornstarch.)
Mix cornstarch and condensed milk, if desired, with enough cold water
or milk to make a thin paste. Stir in sweetened milk. Pour back into pan.
Cook over a low heat until mixture slightly thickens. Remove from heat;
cool.
Add nuts and rose water, if used. Pour prepared mixture into several undivided
ice trays, cover, place in freezer, freeze until firm, 3 to 6 hours.
Store in a covered container.
Before serving, refrigerate 20 minutes to soften.
Serve with fruit, if desired. Garnish with chopped nuts, if desired.
